Cheesecake de Maracuyá |
Y como os lo prometí la semana pasada.. Hoy publicamos nuestra primera receta. Me ha llevado un poco más de tiempo porque tenía que encontrar conversiones (fiables) de medidas de peso. Como sabéis publico en castellano y en Inglés americano, algo que seguiré haciendo para identificar mi blog con aquellos amigos en el país de las grandes oportunidades.
As I promise last week, today we publish our first recipe.
It took me longer than usual because I had to find reliable measurement
conversions. It is my intention to publish both in Spanish and English for all
my American friends overseas; something I will try to keep on doing to identify
my blog with my friends in the country of the greatest opportunities.
Cheesecake de Maracuyá
Ingredientes:
Para la base:200 gr. de Galletas María
100 Gr. de Mantequilla fundida.
Para el relleno:
250 gr. de queso de untar 250 gr. de Crème Freiche
250 gr. de queso Mascarpone
1 cucharadita de esencia o ralladura (yo usé de limón)
4 huevos
150 gr. de azúcar.
Para la cobertura:
125 gr. De pulpa de maracuyá125 gr. De agua
125 gr. De Azucar
1 sobre de gelatina neutra.
Comenzamos pulverizando las galletas hasta que
queden como harina, seguidamente añadir la mantequilla fundida y remover.
Engrasar un molde de unos 22 cms aproximadamente
y preferiblemente desmontable. Colocar papel aluminio sobre su base para que
quede pillado al cerrarla. Forrar también todo el exterior del molde para
evitar que el agua entre, mientras cocinamos al baño maría.
Precalentamos el horno a 180º
Colocamos la mezcla de galletas y mantequilla
sobre la base y apretamos bien con la ayuda de una espátula para que nos quede
una base totalmente compacta y nivelada.
Batimos los quesos, la crème freiche (o crema agria), azucar y
esencia, hasta lograr que nos quede una mezcla homogénea. Sin dejar de batir
agregamos los huevos uno a uno vigilando la total incorporación de estos dentro
de nuestra mezcla.
Mientras se hornea nuestro cheesecake,
preparamos la cobertura mezclamos los
líquidos con el azúcar y llevamos a hervor. Añadimos la gelatina previamente
disuelta en un poco de agua fría y dejamos enfriar.
Una vez tenemos nuestra tarta a temperatura
ambiente y sin desmoldar, vertemos la mezcla de la cobertura. Y llevamos a la
nevera. Este tipo de tartas necesita permanecer en la nevera durante 12 o más
horas. Este tiempo le ayudará a tener mejor cuerpo y firmeza a la hora de
servir. Desmoldar y decorar a vuestro
gusto.
El maracuyá es un cítrico de sabor extremadamente
intenso. Yo utilicé buttercream y chocolate para la decoración. Podéis
utilizar nata montada, chocolate blanco, fruta fresca, etc.

Passion Fruit Cheesecake (English and American
measurements)
Ingredients:
Base:
2 Cups Graham cracker crumbs
1 Cup Melted Butter
Filling:
8 oz Cream Cheese
8 oz Crème Freiche or Sour Cream
8 oz Mascarpone Cheese
1 tsp. Citric essence or Lemon peel
4 Eggs
1 cup of Sugar
Topping:
4 oz passion fruit juice
4 oz Water
4 oz Sugar
1 pkg (3 onz non flavor gelatin)
Butter (or spray with a non stick vegetable/flour spray)
the bottom of a springform pan. Use aluminum foiled to press against the base
and to cover the pan exterior completely. This will prevent the water from
entering while baking ¨bain Marie¨
(a vessel containing usually heated water over or in which something, such
as food, in a separate container is processed)
Preheat oven at 325º.
Pour the cracker mixture into the pan, pressed
the crumbs into the bottom and one inch up to the sides of the pan.
Stir the cheeses, crème Freiche (or sour cream),
sugar and essence until well combined and fluffy. While stirring add eggs one
at the time, until fully added to our mixture. Emptied the mixture into the pan and place it
on a warm water tray (we will be using the Bain Marie cooking technique
described above). Bring it to the oven to cook for about 1 hour and let it cool
completely, after baking.
Meanwhile we could go ahead and prepare the
topping. Mixed the passion fruit pulp
with water and sugar and stir until well combined. Bring to boil. Add the
gelatin (previously dissolved in 3 tbsp of warm water) to the mixture; and let
it cool for about 30 min.
Once we have our cheesecake at room temperature,
pour the gelatin mixture on the top and place it on the refrigerator to chill
overnight. This kind of cakes need plenty of time to chill and firm up, so it´s
best to prepare ahead of time. Go ahead
and separate the cheesecake from the sides of the pan by running a knife around
the edges. I also opened and reclosed the springform pan
to help separate.
Passion fruit has a very sour flavor, so I
decorated mine with buttercream and some dark chocolate. You can also use
whipped cream, white chocolate, fresh fruit, etc.
